Does anyone here know anything about home distilling?

you're cooking it way too hot. you should cook at the boiling point of alcohol, or slightly higher, right about 173 degrees. your vapor has a lot more water, because the temperature is much closer to the boiling point of water. you are probably also getting a lot more of the heads and tails than you would if you distilled at a lower temp, because it wouldn't be coming out so fast
